Today, we're introducing “Muchacha-en White Plum Vinegar!,” a natural, versatile seasoning that concentrates the power of the plum.

This “White Plum Vinegar” (Shira-umezu) is the yellowish, transparent liquid that emerges when ripe plums are salted during the process of making umeboshi (pickled plums), and then bottled. Although its name contains "vinegar" (su), it is distinct from general vinegar; it does not contain acetic acid, which is produced by fermentation. Instead, it is a plum-derived health extract rich in nutrients, umami, and aroma, such as citric acid and polyphenols, that have seeped out of the plums.

Its uses are surprisingly diverse. Besides using it as an ingredient for seasonings and dressings, you can make delicious instant pickles just by soaking vegetables in it. It is also recommended to mix it with your favorite beverage, such as sparkling water, hot water, or milk, to drink.

Notably, due to the antiseptic effects contained in plum vinegar, adding a small amount to bentō (lunch boxes) or onigiri (rice balls), or using it when cooking rice (approx. 1 tablespoon per 2 gō of rice) has the welcome effect of making the food less prone to spoilage.

Furthermore, it is said that it can be used as a gargle to help prevent colds and flu by diluting it with water at a ratio of 1 part plum vinegar to 10 parts water. However, please be mindful of your intake, as this product has a high salt content, equivalent to 24.1g per ml. A guideline for use is about one teaspoon per meal.
