Today, we’re introducing "Hamamigio Eco-Salt: Moshio," which will greatly enhance the deliciousness of Japanese cuisine.

This moshio (seaweed salt) is a meticulously crafted product, made using seawater drawn from the beautiful coast of the Iki-Tsushima Quasi-National Park in Nagasaki Prefecture. First, the seawater is slowly concentrated using a reverse osmosis membrane system. Then, domestically harvested seaweed (arame and hondawara) from its most flavorful season is sun-dried, soaked in the concentrated seawater, and steeped to fully extract its umami components.

Next, the concentrated seawater containing the seaweed extract is carefully simmered down in a traditional hiragama (flat pan). This simmering process uses steam energy from a biomass chip boiler powered by thinned wood from forests, making it an environmentally friendly method. Salt artisans carefully crystallize the salt by hand, then stir and roast it until it becomes a smooth, easy-to-use moshio.

With its added mellow umami from the seaweed, this moshio is perfect for all kinds of Japanese dishes. It's especially excellent as a dipping salt for tempura, fried chicken, or tofu, where it will remarkably enhance the natural flavor of the ingredients. You can also try it in a wide range of dishes like onigiri (rice balls), yakiniku, clear soups, and hot pots. It will transform your everyday cooking into something with a deeper, more sophisticated flavor.
