The pork used in this gyoza is “Yanbaru Shimabuta Agu Pork,” carefully raised in the blessed natural environment of Yanbaru (Northern Okinawa). This rare, indigenous hybrid pig is raised with unique feed blends and abundant affection, breathing clean, delicious air and drinking fresh water.

The biggest features of Agu pork are its soft, sweet meat quality and its low-melting-point fat that melts in your mouth. Furthermore, it is rich in the savory component glutamic acid (about 3 times that of ordinary pork), giving the meat a very strong inherent sweetness and richness.
