Today, we introduce “Fermented and Aged Gibier Meat: Wild Boar!,” a new era meat experience delivered by the “Ukinana” brand, originating from Ukiha in southern Fukuoka Prefecture.

Wild boar meat is characterized by a richer flavor compared to pork, possessing firm resilience, umami, and sweetness. Particularly, the fat part, despite its dense flavor, is surprisingly light and not cloying. To make this high-quality gibier meat even more delicious, Ukinana partially employs “fermentation and aging” using an aging sheet, a method still rare in the gibier industry. This special aging process softens the collagen in the meat, making the texture tender. Furthermore, as proteins are broken down and amino acids increase, the umami is dramatically enhanced.

Ukinana (combining ukiha + the lucky number “7” (nana)) aims to achieve coexistence between humans and animals and promote local charm by valuing the “lives” of wild boar and deer, often referred to as “pests,” and delivering them to the table as a “gift of nature.”
