This flavorful condiment features domestic dried baby sardines (chirimen-jako) soaked in a special oil infused with premium anchovies. These anchovies are made by carefully curing Japanese anchovy (katakuchi-iwashi), caught in the Seto Inland Sea and other parts of western Japan, with domestic salt, herbs, and spices.
