The lifeblood of this stock is the 100% use of healthy young chicken carcasses raised with great care at Akikawa Bokuen. These chickens are full of vitality, raised through antibiotic-free farming—using no antibiotics or antibacterial agents since they were chicks—and growing freely in open-sided coops with natural sunlight and wind. Furthermore, their feed is plant-based, strictly managed to be non-GMO and free from post-harvest pesticides. This stock is born from ingredients so safe they are fit for human consumption.

The production process is also incredibly "sincere." Fresh chicken carcasses are placed in large vats and simmered slowly from cold water over a long period. By carefully crushing the bones during the simmering process, every bit of the umami components hidden deep within the bones is captured and sealed into the stock.
