"Organic Sanshu Mirin," boasting over 200 years of tradition from the rich natural environment of the Mikawa region in Aichi Prefecture, is a premium mirin made from simple ingredients: glutinous rice, rice koji, and genuine shochu. Meticulously crafted by Kakutani Bunjiro Shoten using traditional methods, this mirin is brewed and aged for two years, featuring a natural sweetness and smooth flavor. The glutinous rice is carefully steamed in a traditional Japanese kettle, and the saccharification and maturation process brings out a complex sweetness that offers a refined and deep taste not found in sugar, adding shine, richness, and umami to dishes.
The alcohol content in mirin helps prevent disintegration while cooking, masks unpleasant odors, and enhances the natural flavors of ingredients by penetrating deep into them. It's an essential seasoning in traditional Japanese dishes such as simmered dishes and teriyaki, offering better shine and gloss than sugar.
