Today, we introduce “Domestic Acacia Honey!,” arriving from the pure nature of Hida Takayama in Gifu Prefecture. This honey is brought to us by "Tokai Hachimitsu," a family of beekeepers spanning three generations since their founding in 1952. They are committed to an integrated production process—from raising the bees to collecting the nectar and bottling—preserving pure, high-quality, safe, and secure "domestic" honey.

Acacia flowers in Hida Takayama bloom for only about 10 days a year. During this limited period, the bees gather nectar, which they then fan with their wings inside the hive to evaporate moisture. The honey is only harvested after waiting for it to mature slowly until the sugar content exceeds 80 degrees. This honey, concentrated with the help of nature's power, is characterized by its high transparency and remarkably mild flavor with no strong aftertaste. Its refined and light sweetness is truly a taste worthy of being called the Queen of Honey.

When melting crystallized honey, it is carefully heated at 55 degrees Celsius or below to ensure that important enzymes are not destroyed. No extra sugar or other additives are included, as they cherish the original deliciousness of nature. It goes perfectly not only with black tea and coffee but also surprisingly well with green tea.
