Today, we introduce “Chicken Drumettes Grilled with Yuzukosho!,” made using carefully raised young chicken from Akikawa Bokuen.

This dish uses chicken drumettes from young chickens raised healthily by Akikawa Bokuen through antibiotic-free farming. These chickens are raised freely in open-sided coops, fed plant-based, non-GMO feed, and live in a low-stress environment. Furthermore, the farm engages in community-based circular agriculture utilizing feed rice, ensuring both safety and deliciousness.

The drumettes are thoroughly marinated in a special homemade sauce based on yuzukosho (a unique Kyushu condiment) and domestic whole-soybean soy sauce, then carefully grilled. The juicy umami unique to bone-in meat, combined with the slightly spicy kick of yuzukosho, creates an addictive flavor that pairs perfectly with alcohol.

This dish, which is ideal as a snack with drinks, is delicious as is, but we especially recommend lightly reheating it in a toaster oven. Doing so makes the skin crisp and fragrant, enhancing the flavor even further.
