This healthy Japanese-style karaage is made from the breast meat of Tsukuba Chicken, raised without antibiotics at designated farms at the foot of Mount Tsukuba. It uses a non-frying cooking method where the chicken is steam-baked at high temperatures using special processing instead of deep-frying, reducing the fat content. The marinade is based on naturally brewed domestic soy sauce and is enriched with domestic ginger, garlic, tamari soy sauce, pure rice cooking sake, and Kikai Island coarse sugar, resulting in a deep flavor that enhances the umami of the ingredients.
Tsukuba Chicken is fed a mainly plant-based diet, resulting in less odor and a mild taste. This healthy Japanese-style karaage uses domestic potato starch and wheat flour for the coating, and by simply spraying a light amount of oil before heating, you get a crispy texture. The batter is thin, providing a light and refreshing texture, making it a great choice for those who prefer a healthy option.
