Today, we would like to introduce you to Yamana Shuzo's "▢Douchi Shuzo Nama Nama Genzake"!
Yamana Shuzo's natural sake is a natural sake that has received the full benefits of nature. In cooperation with motivated farmers, late maturing sake rice grown using organic farming methods is individually brewed, and the name of the sake rice producer is also included on the label of each sake made to avoid mixing with other rice makers.
▢Do-shu Nama-no-Mazake
Nojoho, a sake rice that disappeared after World War II, has been cultivated again and brewed at this brewery for many years. Organic junmai ginjo made from this organically grown rice in Taka-cho has a rich finish that harmonizes sweet, sour, spicy, bitter, and astringent tastes, and allows you to fully appreciate the individuality of the rice used to make it.
