Today, we are introducing “Ohsawa's Ryujin Three-Year Umeboshi,” a mellow-tasting pickled plum imbued with Japanese tradition.

This umeboshi (pickled plum) is a special masterpiece, carefully crafted using a time-honored method without sparing any effort. It is, of course, made using pesticide-free green plums and perilla from Wakayama Prefecture. Each green plum is harvested by hand, salted, and then thoroughly sun-dried.

Its greatest feature is the long, three-year period spent slowly aging it, as its name suggests. This three-year maturation process allows excess moisture to escape, transforming the flavor into a mellow taste where the “harshness” of the salt is removed. Although the salt content is high at about 21%, the aging makes the texture very smooth and gives it a deep umami flavor.

Served alongside a bowl of hot, freshly cooked rice, the acidity and saltiness are enhanced, and the richness of its flavor makes it exceptionally delicious. It's also perfect as a filling for onigiri (rice balls) or as a side dish for tea. Umeboshi, which can be preserved for a long time, is truly a crystallization of the wisdom that has supported the Japanese diet for centuries.
