The greatest feature of this miso is its use of 100% top-quality domestic rice and domestic soybeans. Furthermore, it is slowly and naturally aged using "Fukuen" sun-dried crystal salt, which has an excellent mineral balance. This process creates a mellow, "lightly salted" raw miso that isn't just salty, but brings out the inherent umami of the ingredients.
What's more, a notable point is the specialized "Tokusen Ginjo Binchotan-jikomi" (specially selected Ginjo Binchotan charcoal preparation) method.
